Hey guys. I figured since I am going to be starting this food blog to document my journey, I might as well tell you my story. Growing up, I had a healthy relationship with food- I grew up with a family that loved to cook, and food was always something that we bonded over. I love to cook. I have always loved to cook. However, that relationship isn't reciprocated by food. Even when I would swim ten miles a day, I was never a skinny kid. I was always muscle and big, always solid as a rock. And then, as I grew older, it became harder and harder to lose that weight. No matter what I did and how well that I ate, or how much I exercised, I couldn't lose it.
In 2012, I was diagnosed with a thyroid mass - I thought, aha, here's my issue. Turns out that no, it wasn't nearly as simple as that. My thyroid doesn't want to follow any textbook regarding thyroid disease. And then, in 2016, I was diagnosed with PCOS - the dreaded PCOS. Once that happened, that was when I really started looking at a ketogenic, or at least a modified ketogenic, way of life.
Since starting keto, I can say that I have never felt better. However, at least for my lifestyle, it is not sustainable. So, with the recommendation of a registered dietician, I have switched instead to a low-carb lifestyle - one much more sustainable and healthy.
